Other stuff we're eating

Not everything on the blog needs a recipe, but we've got some great pics of the other stuff we like.

These ribs were slow baked at 275 for 8 hours.  Chopped onion and lemongrass on the light ribs, the darker are covered in brown sugar and spices.


My mother in law likes to send us care packages with food in them, as we don't have the variety of produce that we're used to.  I made this pie with Okinawan sweet potatoes, cream, honey and cinnamon.  Very tasty!


Chicken rubbed with Panang curry paste and cooked in the pressure cooker with sliced onions.  Purple garlic mashed potatoes went well with the spicy chicken.



Don't throw chicken skin away!  make your own cracklins and chicken oil.  medium low for about an hour should do(stir occasionally).  Salt them while they're hot, and you're in for a treat!  Plus, you can use the chicken oil to fry other things in.  Try making some home fries.

Very simple prep: salted, dredged in cornstarch, and fried in hot oil.

They were great.  VERY mild, and not fishy at all.  It almost tasted like fried chicken.



Coriander and black pepper crusted hamburgers with blue cheese dressing on an onion roll.
AWESOME.


I get the most out of my Christmas gifts.  This is the zest from the citrus fruit my sister sent us.  I'm going to make a steak rub with some of it.


Fried chicken with garlic mashed potatoes and sauteed peppers and onions.  Season the chicken, and soak in buttermilk for at least 24 hours.  Crumb coat and fry.





Aebelskivers - Danish stuffed pancakes.  We used the Bisquick pancake recipe and stuffed them with ginger preserves.

Strip steak, sunny-side ups and potato hash.  If you haven't tried HP sauce yet, do so.  Best steak sauce ever.  Also, the piri piri sauce is my current favorite hot sauce.


Roasted chicken with a spinach/mushroom/Parmesan cream sauce.
