Pho influenced oxtail stew

My wife introduced me to Pho - the most amazing contribution that Vietnamese cuisine has made to the world.  It's an amazing soup made with the perfect broth and various cuts of meat.  The broth is so good, in fact, that we tried to replicate the flavor in this oxtail stew for fun.  Also, it gave me a chance to use the pressure cooker my sister sent us for Christmas.  If you don't have a pressure cooker, a dutch oven will work, but will also require a lot longer cook time. Enjoy.



Brown the oxtails after seasoning them with salt.

 Remove to a plate to make room for the veggies

chop one large onion, 5 stalks of celery, and three carrots

saute veggies until soft

Add the oxtails back to the pot

Add the Pho spices: star anise, cinnamon, corriander, black cardamom and cloves


Cook for 90 minutes on high pressure.  Add diced starchy tuber(we used Taro, but potatoes would be great too.)and cook on high pressure for an additional 15 minutes.


Enjoy with crusty french bread.
